Description
Camino Verde was founded by Vicente Norero, who originally took over a neglected cacao estate near the town of Balao.
In 2016 the farm changed hands and Camino Verde moved to Durán, near Guayaquil. Today, rather than being a single-estate farm, Camino Verde works with farmers and farming associations from different cacao-growing regions of Ecuador. This allows them to seek out exceptional cacao while supporting growers and helping improve fermentation and post-harvest practices.
A particularly special part of Camino Verde’s work is its approach to fermentation. Vicente’s knowledge of microbiology has led to carefully controlled fermentation methods designed to encourage particular flavour characteristics in the cacao. The beans are then dried, traditionally using the warmth of the Ecuadorian sun.
Once these beautiful beans arrive at Faraway Garden, they are roasted in small batches and transformed slowly into chocolate, allowing the character of the cacao to shine through.
This is micro-batch, bean-to-bar chocolate is made with care, curiosity and a deep appreciation for the people and places behind every bean.
