Craft Chocolate

Delicious, special and unique (and in my case, micro-batch) chocolate. Made with beans sourced from suppliers who have a passion to protect the cocoa bean industry; the farmers are paid a fair amount for their beans, of which have had the best care and are of exceptional quality. We receive the beans after they have been fermented and dried; it is then up to the maker (me!) to determine the roast and how the chocolate is to be made. This decision is always made to compliment the beans in the best possible way. For example, a bean from Peru may have really subtle fruity notes; for this bean I would do a light roast to capture the delicate flavours. A bean from Ghana may have a strong chocolate/brownie taste; for this bean I may do a higher roast to compliment its flavours. After the roast the beans are then winnowed (the shell taken off) and ground in a stone grinder.
Once the chocolate is perfectly smooth and delicious I let it rest before tempering and pouring into the desired mould. Its a labour of love and the result is a chocolate like no other!
