Description
This particular bar is crafted from heirloom cacao grown in the Los Ríos province, in the heart of Ecuador. The farm, Hacienda Limon, specializes in cultivating the exceptional Arriba Nacional variety.
The social goals of Hacienda Limon are primarily managed by 12Tree, a sustainable investment firm that owns the estate. Their strategy focuses on transforming the plantation into a model of social welfare and community development. By enjoying this chocolate, you support a community that provides its workers with scholarships, interest-free loans, and stable, year-round employment.
The beans are fermented and dried on-site to lock in their unique flavor before traveling to my workshop. Once they arrive, I roast, winnow, and stone-grind them for up to three days. I only add enough sugar to perfectly complement the natural character of the bean.
