Milk Chocolate 46% cocoa Domincan Republic single origin 25g (CAPPUCCINO)

I know I say this every time but here you have a very special bar of chocolate…

The cocoa beans from this particular bar come from Öko-Caribe, a cacao processor in the town of Pimentel in the Duarte province in the north of the Dominican Republic. The Duarte province is the largest cacao growing region in the country and Öko-Caribe maintains close relationships with over 150 small farmers within the region providing training, fair prices and organic certification support.

The coffee beans also come from the Dominican Republic (Jarabacoa; a province in the central region surrounded by high mountains, waterfalls and salt water rivers). The farmers are are at the very heart of Dutch coffee bean importer Jhonfy Fernandez’s  business, Joffee. He imports coffee solely from DR and is driven by his passion for transparency, fair trade and of course an honest cup of coffee with a unique and astounding taste.

This single origin bean to bar chocolate is made in the smallest of batches, I often don’t make more than 10 at a time (micro-batch chocolate as us makers call it!). I use both my white and milk chocolate here to create the ‘cappuccino’ effect. I hope you enjoy this bar as much as I enjoyed making it!
