Pure Chocolate 73% Costa Rica (Porcelana de Talamanca)
Im so excited to present to you this incredibly unique chocolate. Porcelana cacao is a rare and prestigious variety of cacao, often considered the “holy grail” of chocolate. It is named for its distinctive white beans, which resemble porcelain when unfermented. True Porcelana is estimated to make up as little as 0.001% of global cacao production.
La Tortuga in Talamanca , Costa Rica harvests five varieties of cacao in one single farm. The idea is one origin, one terroir, but expressing the different personalities of each variety.
I’m lucky enough to be able to try three of La Tortuga’s varieties; Amatista, Porcelana de Talamanca and Selenita.
Alongside the incredible taste, what I love most is their commitment to doing things the right way. They focus on quality ingredients and ethical sourcing, supporting the people and places where cacao is grown. It feels good to enjoy something that not only tastes amazing but also contributes positively to communities and the environment.
I wanted to preserve the soft, earthy notes of this cacao so I roasted the cocoa beans low and slow, and then ground them slowly in a stone grinder for 3 days.
I find the taste of this Porcelana cacao dreamy and delicious; creamy, nutty, earthy and buttery. I’m so curious as to how you find the taste!
