Dominican Republic Öko-Caribe 51% milk Chocolate made with coffee beans from Ethiopia, Sewda
Every last Saturday of the month we can be found at our local farmers market at Rotterdamse Oogst. When here, it always feels like a special treat to get a coffee from our market colleagues @schotcoffeeroasters —who make the most amazing cup of coffee.
So it felt only natural to pair some of their beautiful beans with mine.
This particular coffee comes from the Sewda Wet Mill, located in the Oromia region of Guji, Ethiopia. The mill supports around 600 smallholder farmers, serving as both a purchasing and processing station.
For this bar, I’ve paired these coffee beans with cacao beans from the Dominican Republic. The cacao is sourced from Öko-Caribe, a cooperative based in Pimentel, in Duarte province—the country’s largest cacao-growing region. Öko-Caribe works closely with over 150 small farmers, providing training, fair prices, and support for organic certification.
This bean-to-bar chocolate is made in very small batches, I often produce no more than 10 bars at a time using ingredients that are an absolute joy to work with.
