Pure Chocolate 65% Grenada
This chocolate has been made with cocoa beans from L’Esterre Estate, a small family run cocoa farm in Saint Andrew. It is one of the few farms that control the entire post-harvest processes of fermentation and drying, ensuring consistency and quality from harvest to harvest.
The beans truly are a treat to work with. Unroasted, they smell pleasantly of sweet cocoa and vanilla and have tasting notes of sweet tobacco, pineapple, rum and cream . The beans are quite large and are dark auburn brown in colour.
I decided to roast these beans low and slow, giving them an extra ten minutes than my normal roast and at a lower temperature. The result was amazing. Ive made a 65% bar with these beans. My tasting notes after a two week resting period were; Dark chocolate with undertones of rum and raisin, followed by a bright citrussy taste. The ending was earthy with tones of dark caramel.

All chocolate at Faraway Garden is handmade in teeny tiny batches in Hellevoetsluis, South Holland. Once I receive the cocoa beans I roast, winnow and conch them.
