White Chocolate with Thai Coffee Bean Crunch

Every last Saturday of the month  we are at our local farmers market @rotterdamseoogst . Because we are only there once a month it always feels like a huge treat to get a coffee from market stall holder and coffee roasters, Schot Coffee. I believe they make the best cup of coffee in Rotterdam.

It is here that I bought the delightful coffee beans which are studded throughout this bar.

May I present to you (drumroll, please) Mae Jan Tai; Mae Jan Tai is an Akha hill tribe village perched at 1,350–1,500 metres above sea level in Chiang Rai Province, Northern Thailand.

With tasting notes of star anise, cashew & date, they pair beautifully with the sweet and creamy white chocolate.

This particular chocolate is made with cocoa butter from Ecuador. We make our white chocolate with only cocoa butter, whole fat milk powder and sugar. It is then ground for up to twelve hours in a stone grinder.
