Pure Chocolate 61% Dominican Republic Öko Caribemade with Rott Blontt American Blond Beer

What delightful choice of chocolate you have chosen to inspect indeed!
All chocolate at Faraway Garden is handmade in teeny tiny batches in Hellevoetsluis, South Holland. This particular chocolate is made from cocoa beans from the Dominican Republic in the Duarte province. Öko Caribe is a cocoa supplier that works closely with all their farmers and has multiple community focused initiatives.
The beer I have paired it with is from a Rotterdam based business who also frequence our local farmers market, Rotterdamse Oogst.
“Fris hoppig blond bier eindigend met een zachte bitter. De ruime hoeveelheid dryhop geeft dit bier extra karakter en smaak”. (their words, I couldn’t have coined it better myself 😊).
Once I receive the cocoa beans I roast, winnow and conch them. In this case, after the winnow, I soaked the cocoa nibs in Rott. Blontt for about a week. After drying, I conch the beans for 2-3 days in a stone grinder then let the chocolate set before tempering it into bars…

Anyway, back to the bar… This is quite a strong tasting 60% bar with a pure cocoa punch with delicious undertones of the beer throughout. An absolute cracker of a combination, I hope you enjoy it as much as I enjoyed making it!
