Description
At the heart of Pueblo Bello, Cesar, Colombia, lies Aso Seynekun. The name refers to Seynekun, the word for ‘Mother Earth’ in the Arhuaco IKU language. This highlights the organization’s deep connection with nature and its responsibility to produce in harmony with the land.
Since its founding in 2010, this non-profit organization has been a champion of sustainable agriculture, bringing together 274 indigenous farmers, including 67 women farmers, to cultivate cocoa that reflects the richness of their land and heritage.
They produce coffee, cocoa and panela. The cocoa is used widely in cocoa ceremonies and is a treasured asset to the world of fine cocoa.
This chocolate was ground for 3 days in a stone grinder, then left to rest for a few weeks. It is then tempered and made into bars. As with most of our bars, it is a limited edition.
My own tasting notes are of a distant tobacco followed by a robust red wine and ending with comforting nutty undertones. I’m curious to your tasting notes so please do share with me if you would like to!
