I tried chili crisp oil for the first time at our farmers market @rotterdamseoogst last year. Nicole, from @trouble.and.spice had some samples of Yum Phrik to taste and I liked it so much I immediately bought 3 pots. I put it on almost everything, its amazing stuff. So it was a question of time before we got together to create an equally amazing chocolate bar with it!
It took me a while to get the chocolate right. I was looking for a cocoa bean that had hints of citrus but was also cocoa forward. The cocoa beans I tried with hints of red wine and tobacco (Ecuador, Columbia) just didn’t do the lemongrass and chili justice in the Yum Phrik. After five different cocoa trials I finally found the beans I had in mind: Kokoa Kamili. This is a cooperation in Mbingu (Swahili for ‘Heaven’), in Tanzania who work closely with local farmers who produce organic cocoa beans of exceptional quality.
After a few more trials and errors here you have it! A beautiful 63% pure chocolate bar crammed with Nicole’s chili crisp, the YUM BAR!

Ingredients: Cocoa beans (kokoa kamili, mbingu, tanzania), sugar (nl), cocoa butter (dominican republic oko caribe), yum phrik crispy chili oil from Trouble and Spice (high oleic sunflower oil, chili, garlic, onion, makrut lime leaves, rice, ginger, lemongrass, coconut sugar, salt)

All chocolate at Faraway Garden is handmade in teeny tiny batches in Hellevoetsluis, South Holland. Once I receive the cocoa beans I roast, winnow and conch them. It’s a complex process which I’d be happy to explain to you on market days so please pop by for a chat you are most welcome!
