Bejofo Estate is an organic cacao orchard in northwest Madagascar’s Sambirano valley.
The cocoa beans that I made this chocolate with are up there with my absolute favourites, possibly even at number one. This creamy, almost fudgy milk chocolate paired with the soft, floral notes of wild Madagascan pepper is such a delicate treat.
